3.Traditional Multi-Stage Roasting– The leaves are briefly hand-fired in a wok and then roasted in a four-drawer system at progressively lower temperatures to preserve freshness and develop flavor.
4. Distinctive Hand-Pressed Shape – After roasting, the leaves are carefully arranged between smooth sheets and pressed with wooden blocks, creating the broad, remarkably flat appearance for which Tai Ping Hou Kui is famous.
